This year, Oklahoma City-based Empire Slice House turns ten years old, so founder and restaurateur Rachel Cope stopped by to talk about how the growing restaurant chain got started, the joy of expanding into Tulsa, and what to expect at the tenth anniversary party on October 28 in the Plaza District.
Before Empire began, Cope won a contest to install a restaurant in a former coin-operated laundry. One problem: she didn't know how to make pizza. Despite not being a chef, she took off for California to study under a master pizzaiolo, developed Empire's signature dough recipe, and returned to teach her staff what she learned.
